citeturn9search28

Understanding GABA Accumulation During Soybean Germination
Soybean germination significantly increases the content of gamma-aminobutyric acid (GABA), a functional compound associated with beneficial physiological effects. However, the mechanism behind this accumulation had remained unclear. citeturn9search28
This study investigated GABA content, enzyme activities, and gene expression levels associated with the GABA shunt pathway during germination of soybean cultivar ZH13. GABA reached its highest concentration on day 5 of germination and increased approximately six-fold compared with ungerminated seeds. citeturn9search28
The activity of glutamate decarboxylase (GAD), which synthesizes GABA from glutamate, increased together with GABA accumulation. In contrast, GABA transaminase (GABA-T), which degrades GABA, increased strongly during later germination stages and was associated with the subsequent decline in GABA concentration. citeturn9search28
Gene expression analysis showed upregulation of GmGAD and downregulation of GmGABA-T during the accumulation stage, indicating that transcriptional regulation contributes to changes in enzyme activity and GABA production. citeturn9search28
These findings provide insight into the metabolic regulation of functional compounds in germinated soybean and may support future development of GABA-enriched soybean foods. citeturn9search28
